Fitness Friday: An Easy Healthy Breakfast and a No Nonsense Circuit Workout

I'm just gonna lay it out there friends...this was NOT my healthiest week of eating. I start the week with such good intentions. I have new recipes I want to try, I have a refrigerator stocked with fruits and veggies for snacking. But somehow, Halloween candy makes its way into my shopping cart. And so does a few frozen pizzas. There's obviously nothing wrong with buying these things for a special treat, but when you find yourself too busy to prepare that new healthy meal you bought the ingredients for, the first thing that comes to mind is, "Well...we can just have that frozen pizza!"

Does this ever happen to anyone else? You have the stuff to make a healthy meal but because you are strapped for time...you end up tossing in that pizza or grabbing dinner on the go? That makes me so angry!

But what a lot of successful weekly meal planners tell me is that it isn't just about planning your menu...it's thinking consciously about the time you will have each day that week. Do the kids have to be up early for school that day? Do they have activities in the evening? How much time will you have to prepare and cook a meal that day?

So I have been going in search of some new HEALTHY crockpot meals for days that I know I won't have a lot of time to prepare in the afternoon/evening. I have also been on the lookout for some quick, healthy breakfast options so that we can start to move away from the usual cereal or toaster waffle and fruit. My cousin Krissy showed me a while back how she makes eggs in her muffin pan. It was such a genius idea! And then I found this recipe on Disney Family Fun!

Recipe of the Week: Mini Frittatas

There are so many fun things you can do with this recipe and since my kids will pretty much eat anything in the shape of a cupcake...I know they will enjoy these too. And the best part is that you can make a big batch and have extras to heat up for mornings on the go!

Workout of the Week: No Nonsense Circuit

The reason I chose this quick little circuit for my workout of the week is because it came in very handy for me yesterday. My hubby has been on some major overtime at work and when you are in charge of your two young kiddies from the minute they wake up until the minute they go to bed...it's hard to find time to get in a good workout. So you have to get creative.

We have been blessed beyond belief with our weather lately. I know our days at the park are numbered, so I've been trying to get the kids outside as much as possible. The great thing about the park is that it is an easy place to do some circuit workouts while the kids play. This No Nonsense Circuit workout is one I found a while back and it's easy enough to do just about anywhere...

So yesterday, my sis-in-law and I took the kids to the park and while they played, we did our best to squeeze in some of these moves. I am sure we looked like a couple of goofballs doing our burpees in the middle of the park...but oh well. The kids actually had a lot of fun doing some of the moves with us and man...can they hold a plank!!


Weekly Recap:

Truth be told, I've been a bit of a slacker the last 3 days. I came off a great 10 mile run on Sunday, a fabulous butt-kicking Yoga class on Monday and then gave myself a much deserved rest day on Tuesday. But then Wednesday came...and I half-assed an ab/arm workout on the floor while I watched TV. Yesterday, I managed to workout at the park but it wasn't as serious or intense as it should have been. We mostly played around.

On one hand, I am proud that Dana and I even attempted to workout at the park. We could have sat and drank coffee and talked the whole time...but we didn't. We finally got our butts off the bench and got our heart rates up. And today, I am hoping to get in some more yoga and a run before our next 10 mile run this weekend. Whew!! The half marathon is now officially LESS than a month away. Time to kick it into gear big time!!! Hold me accountable this week friends!!!

CONGRATULATIONS to Brooke for running her first 5K!!!

Brooke is a part of my Operation LGN group on Facebook {and a long time blog friend} who started C25K earlier this year. Brooke completed her first race with personal best time and I am SO SO PROUD OF HER!!!!

  1. You saw that I ran my farthest ever the other day! And I tried your oatmeal recipe. Ok so I still don't like oatmeal. The flavor wasn't bad but I can't do the texture. What training plan do you use for the half? John wants to start training to run one in March.

  3. I LOVE mini frittatas!! So easy and so good. It's a great way to use up vegetables that need to be used :)
